Picaken
Picaken.
I had never heard of it until Joey suggested, in jest, that I try making one after I confessed to having sub-par cake baking skills. But then we just had to try one. For those of you unaware, a picaken is a pie baked inside a cake. Yep, you bake an actual pie, take it out of the pan, put it in some cake batter, and bake a cake around it. Sound intriguing? I thought so.
Conveniently, after learning about the picaken, my birthday was the next birthday, so my friend Katie decided to give it a go and make a picaken for me!
After much discussion, we settled on the flavor combo of mulberry pie and lemon cake (we have mulberry and lemon trees here on the base). So Katie slaved away all for me and then we all partook of the fruity goodness on my birthday night.
It may not have been beautiful, but it was YUMMY!
The picaken.

The inside.

In Katie’s defense, she learned a lot about making a picaken in this process and would make a much prettier one on her next attempt! And there will be a next attempt. We are planning a contest where, over the next few weeks, each of us will take a shot at a different combo of picaken and we will vote on the best.
Any suggestions for flavor combinations?

I say you go local and make a marieta and lamb flap combo.
Would it be a lamb flap pie or lamb flap cake?
The lamb flap is the pie. Sorry, I thought that would be obvious.
My single greatest contribution to your mission work. You’re welcome.
But to be fair, I heard about another missionary making one of these just a few months earlier:

thanks joey.
i know, hers looked amazing!
I vote for chocolate cake and key lime pie.
Carrot cake and cheesecake(it’s a pie, right?)!!
mmm.that sounds good.
I’ve spent way too much time thinking this over. I think I’ll have peanut butter pie and chocolate cake, when you come home and fix it for me that is
Surely after your practice in PNG it will be much easier and quicker here!
mmm…that sounds good too! i’ll make you one when i get home!!
I am with Kelly all the way!
I like Kelly’s idea! Or, chocolate pie and peanut butter cake (if there is such)! You can’t go wrong with the chocolate and peanut butter combo, right?!
you’re right…either way sounds yummy!
I read the blog that Joey posted the first time. Thought it was the strangest thing. Now, you have gone and started the intrigue. Now I want to try one. I love the chocolate peanut butter idea, but really kinda feel like it needs to be a fruit pie to make it work right. Since it’s strawberry season here, I have them on my mind. In a chocolate cake no doubt.
you should totally try one! you might be right about it needing to be fruit. joseph loves the idea of strawberry/chocolate!
Yum! That looks sooooo good! What kind of icing did she use? Non fruity….chocolate pie with red velvet cake and cream cheese frosting
fruity….cherry pie (because yours is amazing) and lime pound cake with lime glaze!
it was a lemony icing. and it was so yummy! mmm.love your ideas. but i dont think i could swing the cherry pie here…there are no fresh cherries! i could buy a super expensive can, but the can filling just isnt as good.
For me, either a coconut cream pie inside a (dark) chocolate cake or,
a chocolate pie inside a coconut cake.
Or ….. maybe with all that fruit some good o’l southern fried pies.
I say we have a another “supporters party” sometime while you’re home, and we all have to attempt a picaken at home & bring to share.
I think my choice would be blackberry with something cream-cheesy.
Great idea Terri!
